A Light to light up the whole world...

‎"I've come to bring you happy news for everyone everywhere. Today, in David's town,in Bethlehem, God's Son has been born!. They had heard about this Promised Child and now he was here. Heaven's Son. This baby would be like that bright star shining in the sky that night. A Light to light up the whole world. Chasing away darkness. Helping people to see. And the darker the night got, the brighter the star would shine." -
The Jesus Storybook Bible
We pray you experience a very joyful Christmas as we celebrate the birth of God's Own Son!

Love,
Thang, Katie, Nora and Silas

Welcoming Silas

As many of you probably already know, we welcomed our sweet little boy into the world a week ago Saturday! Silas Ray Vinh Tran was born at 2:26 pm on December 11th, weighing in at 7 lbs. 2 oz. and 20 inches long.

He surprised us like his sister by coming early. Nora had come 9 days early, so I was expecting him to make his entrance around the 15th or 16th, but little Silas was even more eager than his big sis and came 13 days early (due date was Christmas Eve)!

Many have asked about his name. "Silas" has always been Thang's favorite boy's name, since before we were even married and I quickly fell in love with it. The name comes from the book of Acts in the Bible, Silas was one of Paul's missionary partners. It means "of the forest". Based on his name, we are specifically praying Psalm 1 for our boy...
Blessed is the man
who does not walk in the counsel of the wicked
or stand in the way of sinners
or sit in the seat of mockers.
But his delight is in the law of the LORD,
and on his law he meditates day and night.
He is like a tree planted by streams of water,
which yields its fruit in season
and whose leaf does not wither.
Whatever he does prospers.

Not so the wicked!
They are like chaff
that the wind blows away.
Therefore the wicked will not stand in the judgment,
nor sinners in the assembly of the righteous.

For the LORD watches over the way of the righteous,
but the way of the wicked will perish.
"Ray" is a family name. My grandpa's name was Raymond , but went by Ray and my dad's middle name is Ray. I wanted to pass this name along since my dad didn't have a male heir to pass on the Faust name. It took a little convincing for Thang as he thought "Silas Ray" might sound a little too close to the name of a certain "achy-breaky" country singer. However, I think Silas Ray would make a good name for a Blues guitarist...

"Vinh" is Vietnamese and means "glory". If we have more boys, this will also be their middle name. In the Vietnamese culture, all the boys of a certain generation have the same middle name, so the pressure was on to pick a good name since we were not just choosing it for this child!

We are loving our little boy, and, honestly right now he is making it pretty easy on us by still sleeping about 23 hours a day. His timing turned out to be pretty perfect as Thang was able to take a week off when he was born and he now has 2 weeks of Christmas vacation...giving us 3 full weeks together! I may just get too used to this!

Enjoy a few pictures from the last 10 days...

What a blessing it is this Christmas to celebrate the birth of our Savior while holding our own little boy in our arms!

37 Weeks: The Ludicrous Stage

Now less than 20 days until my due date and, Lord willing, less than that 'til our Little Man arrives. I am now calling this stage of pregnancy the "Ludicrous Stage"

... as in my belly is so ludicrously large, it's hard keeping it covered even in my largest maternity clothes.

...as in my feet and ankles are so ludicrously swollen even my Birkenstocks and house slippers are tight. Some days it's not even worth leaving the house knowing I'll have to squeeze my feet into something!

...as in my hands and wrists are so ludicrously swollen I haven't worn my wedding ring for a month and my hands are slightly numb as I type!

Thang also recently told me that he's had visions of our tiny, newborn son with long, wavy tresses down his back...and I'm starting to believe it considering the heartburn I've had throughout this pregnancy.

Ahhhh, if I didn't keep laughing about it, I might just cry. : )

Despite all these pregnancy symptoms, baby and mama are quite healthy, my blood pressure is normal and my belly is actually measuring right on now (it was measuring quite large earlier in the pregnancy and there were some concerns that something could be wrong with the babe). Don't get me wrong, I am SO, SO THANKFUL for this child and for a pretty uncomplicated pregnancy, just already identifying with Romans 8:22. I recently remembered being at this stage with Nora and telling Thang I would be ok with adopting our next child...then not less than a week after Nora was born trying to figure out when we could get pregnant again!

Nora had to get in on the action.
Nora's belly pic. : )

I have also been trying to get myself psyched up for birth. We had a really wonderful, peaceful, unmedicated birth with Nora (thank you Lord for jacuzzis!) and I am praying for another great experience. For some reason though, I am feeling a bit more apprehensive this time around...maybe because I know what to expect? But, I keep reminding myself that God made my body for this and how when I went into labor with Nora I was in this "zone" where I just knew I had a job to do and I needed to let my body do it.

I've been watching some Youtube videos of births and came across this video. A friend sent this to me when I was pregnant with Nora and I find it so inspiring. The lady has 2 strong contractions during the duration of this song!!!

If only I had such a voice!

We'll keep you all updated on this Little Man's arrival...my prediction is around the 16th or 17th...yikes, that's less than 2 weeks!!!

"Real food" resources

We've made a lot of changes to the way we eat around here over the past year-and-a-half after doing a lot of reading on health, nutrition and food production. While I've always tried to eat on the healthier side, since becoming a full-time homemaker, I've been able to move towards a more "real food" diet, aka less processed foods and more homemade/whole foods. Don't get me wrong, we eat our fair share of pre-made stuff (Nora and I enjoyed some Costco frozen egg rolls for lunch today...YUM!). But, I've had a few friends ask me about our changes and our food sources, so thought I'd compile the info. in one place.

Some of the major changes we've made:

Skim milk to whole milk (preferably non-homogenized if we can find it) and we're even transitioning to half-and-half

Low-fat dairy to full-fat diary (yogurt, sour cream, cheeses, etc.)

Cooking and baking with vegetable oils (i.e. canola) and shortening to coconut oil and butter

Factory-farm raised eggs to local, free-range eggs (when we can get them)

Factory-farm raised chicken to local, hormone/antibiotic-free, free-range chickens

Conventionally-raised beef to hormone/antibiotic-free, grassfed beef (indeed, this former vegetarian just filled our deep freeze with 1/4 of a cow...I love me some steak!)

White flour to fresh-milled, whole-wheat flour (when I can get it, otherwise, I'll use prepackaged whole wheat flour)

White sugar to honey, Grade B maple syrup and Sucanut (a less-processed sugar)

Ok, reading this list sounds overwhelming even to me. It's been a slow process making these changes, but you'll still find white flour and sugar in our pantry (cause they just work better in some recipes). We're not super strict about this stuff, just trying to eat this way when we can.

Some of the books that influenced my decisions to make these changes (including returning to omnivore status after 16 years as a vegetarian):

The Maker's Diet by Jordan Rubin

Nourishing Traditions by Sally Fallon (a cookbook, but also packed with nutritional info.)

I quickly realized once we decided to make some of these changes, that finding whole foods is sometimes not as easy (or cheap) as conventional foods. It took a bit of searching around the web and asking friends to find the most frugal sources I could. So, here is what I've found so far:

Unrefined, organic coconut oil at Soaper's Choice - Although this company markets their products for soapmakers, their coconut oil and many other oils are food grade. I can get a 7 lb. bottle for $27.30, the cheapest I've found yet.

Pastured chickens and eggs from Hayden Farm in Mondamin, Iowa. I like to buy 3 or 4 whole chickens several times a year to keep in our deep freeze. And, their eggs are amazing, the yolks are nearly flourescent orange they are so chock-full of Omega-3's! When I asked Mr. Hayden what they eat, he said "oh, you know, bugs, seeds, whatever they find in the pasture" - just like chickens are meant to eat! The Haydens make trips to Omaha about once-a-month, so I call to find out when they'll be coming through and then meet them to pick up my loot. I found this farm through a site called Local Harvest which is a great source for finding local farmers in your area that you can buy directly from.

Hormone/antibiotic-free grassfed beef from Sobotka Farm in Inman, Nebraska. They also make monthly drops in Omaha and often have fresh produce and other products as well. We've only ordered the beef from them, I haven't price checked on their chicken and eggs. I found these folks by word-of-mouth, but another great source for finding grass-fed beef and more natural animal products is a site called Eat Wild.

Natural cheeses, whole grains and other bulk natural foods from Azure Standard. This company is based in Oregon and makes semi-truck deliveries across the country once a month. While some things are cheaper to buy locally, I've been buying 5 lb. packages of raw cheddar cheese and 25 lb. bags of organic oats and black beans from this company and have saved a ton. I shred the cheese and freeze it in smaller portions and keep the grains and beans in big buckets in our basement.

Fresh-milled whole-wheat flour - I was pleasantly surprised to find a grain milling station at my local Hy-Vee (76th & Cass location only). I don't usually shop at this store, but I'll make a special trip when I need to. I put the flour in my freezer as soon as I get home to preserve as much of the nutrients as possible and to keep it from going rancid. In fact, this reminds me I really need to stock up! I aspire someday to have my own grain mill, but boy are those puppies expensive!

I buy the bulk of our weekly groceries from Whole Foods and Costco. We just recently joined Costco and I was super-pleasantly surprised to see a large selection of organic foods - frozen broccolli, salads, milk, butter, bread, etc. We also just recently got a Trader Joe's here in Omaha and I can't wait to check them out as I've heard they are less pricey than Whole Foods.

I hope these resources are helpful! I am always looking for cheaper options to eat healthy...so if you have any suggestions or better resources, send them my way!

Pumpkins, pumpkins everywhere!

We headed to Pooley's Pumpkin Patch a couple weeks back with our church small group and had a fantastic time. Is it just me or has this been the most amazing fall ever for those of us in the midwest?! It was sunny and 75 degrees that day. And, today it's sunny and 65! A year ago we'd already had our first blizzard!

So, here are a few pics of our fun, sunny Autumn day...

Working on petting gently...definitely a skill needed before Little Man arrives!

Ha! Looks like she's concentrating really hard on driving that tractor...we soon realized by the stinkiness coming from her diaper, she was concentrating on "other" things. Yeah, time to get on that potty training!

This one's just my size!

This, That and the Other

Some updates on us...

Pregnancy :: I had my 28-week checkup last week, and indeed I am still measuring big...33-34 weeks. *Sigh*. Carrying around this big ol' belly is getting tiring plus I've had several nights here and there of insomnia, which is rough. But, Little Man, is way active - kicking, punching and even tickling Mommy with funny flutters. I can even make out body parts like his feet. This is a pretty new experience for me as Nora loved to sleep in-utero and pretty much just wiggled her bum back and forth. I must admit, I am slightly intimidated by the idea of mothering a little boy. Having grown up with one sister and having Nora, not sure what I'm in for...but I'm sure it will be a sweet adventure no matter what!

Thang :: Is, in a word, AWESOME. I had a VERY short night of sleep last night and am feeling pretty miserable. So, as soon as he got home from work, he packed up Nora and headed to the library and park to give me a break and is picking up dinner on his way home. AND, because the couch is pretty much the only comfortable place for me to get some shut-eye these days, he drug out his sleeping bag and camped out on the floor next to me several nights this week. God bless that man.

Nora :: Growing up way too fast and continuing to make us smile everyday, thankful we get to be her parents (do I say that often enough?). Miss Nora will soon get an entire post of her own, but here's a sneak peak of some of her latest: practicing to be a "ballewina fow Halloweena!", the early stages of potty-training and theology for 2 year olds. Aren't you intrigued?! More to come on all this...

Scripture :: A couple of verses I am meditating on today...
"The purposes of a man's heart are deep waters, but a man of understanding draws them out." Proverbs 20: 5
"The lamp of the LORD searches the spirit of a man; it searches out his inmost being." Proverbs 20: 27

House :: I am definitely entering into the "manic nesting stage" of pregnancy, which means lists of projects for myself and "honey-do" lists for my honey. The kiddos will share a room, so I am trying to come up with creative ways to make Nora and Little Man's room fun and gender-non-specific while trying not to change things too much for N. I have lots of ideas I'm excited to share on this transformation! We are also in the process of redecorating our bedroom (or should I say decorating it in the first place). Thang and I have been going through Mark Driscoll's study on the Song of Solomon and have been reminded that our room should be an oasis (which isn't quite happening when you still have t.v. trays for nightstands). Before and after pics to come!

Some random posts I've collected that I wanted to pass along ::

Apple Pickin'

It was a dark and dreary day...but we braved the apple orchard anyway!

If you grew up or have lived in Eastern Nebraska, you know that a proper autumn is not complete without a trip to Nebraska City to pick up a couple pecks of apples, apple butter, apple cider, apple fritters...I was so excited to finally take Nora to do some apple picking. I love making memories as a family!

26 30 26 Weeks

It seemed like from the moment I got a pregnancy test, I was ready to toss my regular jeans and dig out my maternity pants. With Nora, I often got the comment "How far along are you?! You're so tiny!"...this time around it's been more like "When are you due?...December?! That much longer?!" At my 24 week appointment, my feeling of busting at the seams was confirmed when my midwife measured my belly and announced I was measuring at 28-29 weeks!!! After feeling around, poking and prodding, she decided she didn't think it was baby that was so huge, but that I probably had a lot of fluid. She had me schedule another ultrasound and to go home and not worry. Uh-huh. Sure.

Of course, as soon as I got home I googled "excess amniotic fluid" and was given diagnoses ranging from absolutely nothing being wrong with me or babe to issues with the baby's digestive tract or other birth defects. We had to wait a week-and-a-half for our ultrasound (that was the earliest they could get me in). I became keenly aware of every little kick or twitch coming from my belly as I prayed that he was healthy and strong. I was also reminded how very little control we have over these little ones growing inside of us - I was powerless but to pray, and pray I did.

For you formed my inward parts; you knitted me together in my mother's womb. I praise you, for I am fearfully and wonderfully made. Wonderful are your works; my soul knows it very well. My frame was not hidden from you, when I was being made in secret, intricately woven in the depths of the earth. Your eyes saw my unformed substance; in your book were written, every one of them, the days that were formed for me, when as yet there were none of them. - Psalm 139: 13-16
I rested in knowing that my gracious Heavenly Father was knitting this babe together, that what is "secret" to me is not secret to Him. And, that, no matter what, this baby is fearfully and wonderfully made. I also clung to these verses...
do not be anxious about anything, but in everything by prayer and supplication with thanksgiving let your requests be made known to God. And the peace of God, which surpasses all understanding, will guard your hearts and your minds in Christ Jesus. - Philippians 4: 6-7
...and found comfort in knowing that although my Father is sovereign, all-knowing, all-powerful, He still allows His children to ask Him for things. And, besides a couple of brief, freak-out moments, I truly experienced God's peace in the waiting.

Praise God, the ultrasound showed our little man growing normally with all systems working well...and swimming in a very large pool of fluid! So, at 26 weeks I was measuring at 30 weeks as my belly continues to expand and grow. At this rate, at full term I will be measuring at 44 weeks pregnant!!! My midwife assured me that the fluid will probably level off and my belly growth will "normalize"...for the sake of stretch marks, I do hope so. : )

26 weeks w/Nora (in Florida for our "Babymoon")
30 weeks w/Nora
26 weeks w/Little Man Tran!!!

P.S. If you have any mu-mus, please send them my way, I may be needing them come December!

Worship on a Monday morning.

Just wanted to pass along a few songs that have in my brain lately. I know I have more to say about worship, but I just wanted to encourage you with these. They are often running through my mind or spilling from my lips as I seek to remember the Lord's goodness on Monday, Tuesday, Wednesday...

"You turned my wailing into dancing;
you removed my sackcloth and clothed me with joy,

that my heart may sing to you and not be silent.
O LORD my God, I will give you thanks forever."

Psalm 30: 11-12

This is a favorite of Nora's...when we ask her what song she would like to sing before bedtime, she excitedly starts into the chorus, "Hosaaaaaa-NA! Hosaaaaa-NA!" Hosaaana in da highest!"

If you are familiar with this song, yes, this is the "sloppy wet kiss" version. I like it better. : )

8.04.2010

Aaaand the ultrasound says...

Nora is proud to announce that come December, she will be the proud big sister to her...

We are all VERY EXCITED about our little guy! When we told Nora the news, she started giggling like crazy (we are counting on this meaning she is pleased with the news and not that she was just deliriously tired from playing with cousins all morning!). We even went out a bought him his first little onesie (Nora's not wearing it in the pic, although it looks like it).

The ultrasound showed all the organs, parts and sizes looked normal and accounted for and our little boy was VERY ACTIVE...even did a total flip in the middle of the scan! I couldn't believe how much he was moving and I couldn't feel a thing! My placenta is anterior, meaning it's on the outside, which explains why I still haven't felt much of his shenanigans.

Here are few pics of our cutie...

Profile pic...love that cute little nose!

Just saying "hi". His face is on the left. Such a friendly little guy, don't you think? ; )

This one I call "The Scream"!

It's so fun to finally be able to call him a HIM...although we are keeping the name secret until he's born. ; )

I have to add that this morning, as I was getting ready for the day, packing up Nora's bag, making breakfast...I was overcome with gratefulness to my Heavenly Father for the amazing gift of motherhood and completely humbled that He would assign me as a steward to these little ones.
Thank you, Father, for this gracious, gracious gift!!!

Baby Pool

So, we're at T-minus 5 days until we find out the gender of our sweet baby! We are SO EXCITED! I have to admit, I was initially convinced this was another little girl, but have been swayed to think it's a boy (not that it will really matter in the end!). There are 7 ladies pregnant at our church who are all due within a month-and-half of one another. So far, the 5 ladies who know what they're having are ALL HAVING BOYS! So, I'm thinking there must be testosterone in the air. : )

Baby belly at 19 weeks - I'm officially HUGE! 19 weeks with Nora

So, go ahead, take a guess at what we're having. Click on the link below to take a guess at gender, birth date, weight, etc. (I'm officially sticking with my original guess of a girl)

Menu Plan - Week of July 19th

I am posting my menu for this week, not because you are all on the edge of your seats wondering what the Tran family will be eating, but because this is literally the first menu I've planned for 3 months!!! I am back in the kitchen this week and starting slow.

Monday
No-knife pasta (my friend, Sarah, passed on this recipe to me before I went to grad school and I honestly ate it at least 3 nights a week, so quick and easy! I like to substitute shredded parmesan for the fresh mozzarella for a little different flavor. Yum-my!)
Salad

Tuesday
risotto w/tomato, corn and basil (Thang has been craving basil lately!)

Wednesday
Small group potluck (waiting to hear what the theme is to choose my dish)

Thursday
Chicken, spinach and tomato pesto pasta
Salad

Friday
Grilled pizza
grilled asparagus

Saturday
Marinated tuna steak
grilled summer veggies
crusty homemade bread

Sunday
Quinoa soup w/avocado, corn and chicken (I also got this recipe from Sarah, but found it at this link as well)
crusty homemade bread

Surviving the 1st Trimester, and beyond...

Thang tells me things were pretty rough for me during the 1st trimester with Nora, but I feel like they've been rougher this time around. Not to go into excruciating detail, but with Nora there was a lot of nausea, with this one, things went well beyond nausea (catch my drift?). I seriously have an even greater appreciation for those ladies who are sick throughout their entire pregnancies (I know several) and yet have had multiple children (can't imagine being sick like this for literally years of my life!).

God is so gracious though, and instead of the 16 weeks of yuckiness I had with Nora, things have seemed to settle down for me around 15 weeks this time. Now to enjoy the rest of the pregnancy (well at least until the back pain and swollen ankles begin, but I'll take that any day over the 1st trimester stuff).

I thought I would share a few of the things that seemed to provide me some relief.

Papaya enzymes. These are a great digestive support and helped alot with the burning, acidy feeling I would have sometimes after eating. These were recommended by a natural health practitioner, but I also checked with my nurse midwife to make sure they were safe. She gave the ok and while they were by no means a cure-all, they definitely helped.

Chewable prenatal vitamins. I quickly learned there was no way I could choke down those horse pills they call prenatal vitamins when my gag reflex was already on overdrive. I was so happy to find these...they were like a special treat, tasted like candy. I especially liked that they used natural coloring like blueberry and and carrot juices. I was surprised to see that most prenatal vitamins, including the samples provided by my midwife used artificial coloring.

Sea bands. A friend lent me hers when I was about 12 weeks along. These bands are worn on the wrist and provide a special pressure point to relieve symptoms of motion sickness...and pregnancy blahs. I don't know if it just happened to be the timing and things were starting to get better on their own, but after starting to use these my nausea got much more manageable. They basically look like some sweet, 1980's-style wrist sweatbands. I joked I needed one of these lovelies to match...

Aaaaah, ice cream, a little bowl/cone of heaven. As with my last pregnancy, the be-all, end-all, sure-thing when absolutely nothing else sounded appetizing was ice cream. Thang found an awesome sale on Breyer's and literally stocked our chest freezer. No, probably not the most nutritional meal, but often my dinner, and yes, a couple of times my breakfast. But, hey, there's calcium in ice cream, right?!

Another sure-fire remedy for the yuckies was a decaf Frappuccino. If I was out-and-about and started feeling sick, I was so thankful to know there would be a Starbuck's at the next corner. Can I just say, Target + Starbucks = DANGEROUS, DANGEROUS combination!

And, last but most certainly not least, PRAYER! Looking back over the past 2 1/2 months, I honestly don't know how I got out-of-bed some days, let alone took care of Nora, but by the grace of God. There were many days, my heart's cry was simply "help me, Father, help me do this next thing". There were many times when I just needed to get out-of-the-house for small group or an appointment and I would pray and ask God to ease my yuckiness and He would take away my symptoms for several hours! It was awesome! I wish I could say this was always my first thought when morning sickness hit hard, but God was so faithful in the times that I did.

Hope some of these ideas are helpful. I know some of these come from the advice of several friends and I always appreciate hearing what other mom's have found to help them through.

So, for those of you who've been through a pregnancy or two, what got you through the worst of it?
(I'm tucking your ideas away for the next time...)
